Our Vision

Mai COLACHI in Texas USA - is a casual dining restaurant in an upscale setting that celebrates the eclectic, inspirational culture of South Asia’s Mughal Dynasty with unique tradition of Karachi. A colorful variety of spices, from mild to hot, will embrace a worldly variety of cheeses, spices, herbs, red meats, poultry, seafood, breads, and biryani—all of which will come together on hot charcoal, sizzling grills, and aromatic ovens. Art and architecture will complement the ethnic celebration. CBG will export the experience, via various catering arrangements

The Friendlist Professional Chef

Mr. Noor Khan has a certificate in food and beverage management from the Pakistan Institute of Tourism and Hotel Management. He has more than 15 years of professional experience in various types of restaurants, including American, Mediterranean, Italian, and Lebanese food. His focus, however, lies with the Indian – Pakistan based and Mughlai kitchen. He is an expert in food preparation in accordance with the Halal concept.
Mr. Khan has worked as Executive Chef in several different restaurants where he was responsible for all food production areas, developed menus and recipes, and monitored food quality with the help of quality assurance programs he created. Mr. Khan has participated in international culinary competitions, of which some where broadcasted on national television. Furthermore, he was involved in numerous cooking shows on television from several national and international TV networks

HISTORICAL BACKGROUND

Goals & Vision

COLACHI (Kolachi) was a port located at modern Karachi and the old name of Karachi, Sindh, Pakistan. According to legends, it was a port developed when an old fisherwoman by the name of Mai Kolachi settled near the delta of the Indus River to start a community. One of the main Flyover (overpass) in Karachi has been named after Mai Kolachi. This settlement was also known as "Mai Kolachi jo Goth" or "the village of the Mai Kolachi"

Pakistani Cuisine

Pakistani cuisine is a refined blend of various regional cooking traditions of South Asia. Pakistani cuisine is very similar to North Indian cuisine, but incorporates noticeable Afghan, Central Asian, and Eastern influences. The fusion Mughlai cuisine is the most popular cuisine found in most Pakistani restaurants.
Within Pakistan, cuisine varies greatly from region to region, reflecting the country's ethnic and cultural diversity. Food from the eastern provinces of Punjab and Sindh can be highly seasoned and spicy, which is characteristic of the flavors of the South Asian region. Food in other parts of Pakistan, particularly Baluchistan, Azad Kashmir, Gilgit-Baltistan, Khyber Pakhtunkhwa, and the Federally Administered Tribal Areas also hold distinct tastes based on various regional influences.
